Chicken Caprese Salad

Another one of my favorite recipes that requires only a few ingredients but comes together so tastefully.

  • This was inspired after a recent trip to Italy and Greece where I just loved the taste of the tomatoes there. I'm telling you, they're not kidding when they say the food tastes different (in a good way) in Europe.

  • A key ingredient here is Trader Joe's 21 Spice Salute. That's right-- it includes a blend of 21 different spices and seasonings, but salt is not one of them! If you're having trouble finding sodium-free seasoning blends on the market and don't want to fill your spice rack with seasonings you may never use again, I definitely suggest you give this one a try.

  • Another key player here is Roth Havarti Cheese. I purchased this at Walmart, and the price point was definitely relative to other cheeses of its kind on the market. It does come in different flavors, but I opted for the tomato basil flavor (it only seemed fitting) and voila!

  • This is great on its own to serve a group, or to meal prep (hence why I didn't add any dressing, but feel free to get creative with it).

Instructions

  1. Cube your boneless, skinless chicken breast and marinate in a gallon-sized Ziplock bag with olive oil and 21 Seasoning Salute for 30+ minutes.

  2. Pan-cook the chicken & marinade on the stovetop until thoroughly cooked.

  3. While the chicken is cooking, cut or cube up your cheese and tomatoes.

  4. When the chicken is thoroughly cooked, combine all ingredients in a large serving bowl (ideally with a lid), add in fresh basil, and give it a toss.
