Pumpkin Oat Balls

These oat balls make the cut for breakfast, snack, or grab-and-go option! Incorporating pumpkin puree, they’re great for my pumpkin lovers or as a seasonal recipe.

Ingredients

  • 1.5 cups dry oats

  • 1/4 cup chia seeds

  • 1/4 cup honey

  • 1/2 cup nut butter of choice (I used Sun Butter)

  • 1/2 cup pumpkin puree

  • Cinnamon (quantity to your liking)

Instructions

  1. Combine all ingredients in a mixing bowl.

  2. Use a scooper to scoop and roll out even portions.

  3. Line on a wax paper or parchment paper lined tray and allow to chill.

  4. Whatever you’re not eating right away, store in an air-tight container.
