Turkey Taco Stuffed Peppers

Why I LOVE stuffed peppers:

  • Your all-in-one for carbs, protein, fat, fiber, veggie

  • So many variations possible- get creative!

    • Try buffalo chicken stuffed peppers, etc.

  • Easily re-heatable, making them perfect for meal prep, work lunches, or a heat-and-eat option

  • Adding the rice to your mixture is a great way to "stretch your starch"

Instructions:

  1. Cook your brown rice in rice cooker or other preferred method; set aside.

  2. In a large saucepan with a little bit of water on the bottom, place the whole peppers to allow to lightly steam & soften. Remove when done.

  3. While that’s steaming, shred your cheese (you can omit this step if using pre-shredded cheese)

  4. In a large pan, heat up avocado oil. Add your ground turkey & seasonings.

  5. When the turkey is cooked, add a can of drained, rinsed black beans.

  6. Add your cooked rice to the turkey mixture & combine.

  7. Halve your peppers and place on an oven safe baking sheet or tin-foil tray.

  8. Stuff your peppers with turkey & rice mixture.

  9. Top with shredded cheese and broil until cheese is melted.

You will likely have cooked turkey & rice mixture left over— you can use this to stuff additional peppers or eat it as is.
