Spinach Pie
This fridge & freezer clean out recipe ended up being a big hit! Using a pre-made pie crust, frozen spinach, leftover phyllo dough from the holidays, and some cheese- who says pie just has to be for dessert?!
If you prefer savory over sweet, then you’ll definitely enjoy this dish. This makes for a great meatless option, a fantastic appetizer, or a smash hit if you bring it as a guest.
This recipe was inspired by Spanakopita, but with a twist of using what I already had in the house as part of the Sunday reset.
Ingredients
Premade pie. crust, defrosted & thawed
3-4 sheets Phyllo dough, defrosted & thawed
1 package frozen creamed spinach
1 small yellow onion, minced
2 garlic cloves, minced
Black pepper to taste
3/4 cup shredded mozzarella cheese (I used part-skim); separate into 1/2 cup and 1/4 cup
Instructions
Preheat your oven and bake the pie crust according to package instructions.
In the meantime, mince your onions & garlic cloves
Remove the pie crust from the oven and lower the heat to 350 F.
Cook the creamed spinach in the microwave according to package instructions.
To a mixing bowl, add the onion & garlic, cooked creamed spinach, 1/2 cup mozzarella cheese, and black pepper. Stir to combine.
Transfer to your cooked pie crust & smooth evenly.
Sprinkle remaining 1/4 cup shredded cheese across the top and layer with 3-4 sheet spa phyllo dough.
Transfer to the oven at 350 F for about 20 minutes; remove, allow to cool & enjoy!
