Crustless Broccoli Cheddar Quiche

This recipe is meatless, vegetarian, and gluten-free! You could even bake this in a deep dish pie crust as well.

Ingredients

  • 8 large eggs

  • 8 oz cheddar cheese

    • Can buy it pre-shredded or shred it yourself; I used a block of reduced fat sharp cheddar

  • 12 oz broccoli florets, finely chopped

  • 2/3 cup nonfat plain Greek yogurt

  • 1 small yellow onion, diced

  • Garlic powder to taste

  • Salt, black pepper & garlic powder to taste

Instructions

  1. Preheat your oven to 375 F.

  2. To a large mixing bowl, crack 8 eggs, add your yogurt, and scramble together.

  3. Add your shredded cheese, finely chopped broccoli florets, and diced yellow onion

  4. Season with salt, pepper & garlic powder. Mix until all ingredients are thoroughly combined.

  5. Lightly grease a round, nonstick baking pan and transfer the mixture. Smooth the top evenly.

  6. Bake for 40 minutes, or until the eggs are thoroughly cooked (not jiggly) and the edges are starting to develop a nice, browning crust.

Optional Substitutions

  • Can do a mild, sharp, or extra sharp cheddar

  • Your choice on the fat content (I opted for reduced-fat cheddar)

  • I used nonfat, plain Greek yogurt to up the fat-free protein content in this recipe, but you can certainly use milk, cream, non-dairy or similar alternative.
