Sweet Pea Risotto

This risotto is the perfect blend of sweet, savory, and creamy, making for a great side dish to just about any protein.

Ingredients

  • 1 cup rice of choice (I had white rice) - for a creamier texture, you’ll likely want to to opt for a less gritty and grainy rice (i.e: white rice over brown rice)

  • 2 cups broth of choice (I used some remaining beef broth that I had, but feel free t use chicken broth, vegetable broth, or even bone broth to up the protein content)

  • 1 can sweet peas

  • 1 large shallot, diced

  • 2 tbsp extra virgin olive oil

  • 1/4 cup grated parmesan cheese

  • Salt, pepper to taste

Instructions

  1. Heat up your pot on the stovetop with 2 tbsp EVOO.

  2. Add the diced shallot and stir until fragrant and transluscent.

  3. Add 1 cup rice and toast for a minute or 2.

  4. Add your broth, salt & pepper. Cover and allow to cook.

  5. When the rice is mostly cooked, add your can of sweet peas including the liquid.

  6. Add your grated cheese and stir together until all the ingredients come together.

  7. Serve right away or keep covered, adding 1/4 to 1/2 cup liquid as needed if it absorbs the liquid over time.
