Turkey Stir Fry
A stir-fry is a great ‘in-a-pinch’ dish because you can essentially throw together any starch, veggie, and protein into one pan for a quick, easy, and balanced meal.
Ingredients
1 package ground turkey (or 1-2 pounds ground protein of choice)
1 cup cooked & cooled (white) rice
Mixed fresh or frozen veggies of choice
4 large eggs
2 tbsp reduced sodium soy sauce
2 tbsp oyster sauce
1 tbsp Hoisin sauce
1 tbsp sesame oil
1 tbsp sesame seeds
2 tbsp minced garlic
2 tbsp avocado oil
Instructions
Heat up a wok or large saucepan with 2 tbsp avocado oil.
Add ground turkey & minced garlic. Cook down a little, then crack 4 eggs into the pan.
Scramble the eggs in the pan and allow to cook.
Add cooked, cooled rice & veggies directly to the pan.
Add soy sauce, oyster sauce, hoisin sauce, sesame oil, and sesame seeds. Stir together.
Serve & enjoy, or portion out evenly into containers for meal prep.
If you’re looking to reduce calories from fat in this recipe, consider cutting down on the oils used (use 1 tbsp sesame oil at the beginning & omit avocado oil — ground turkey is very moist so as it cooks down it will release moisture that should prevent it from sticking to the pan.
