Turkey Stir Fry

A stir-fry is a great ‘in-a-pinch’ dish because you can essentially throw together any starch, veggie, and protein into one pan for a quick, easy, and balanced meal.

Ingredients

  • 1 package ground turkey (or 1-2 pounds ground protein of choice)

  • 1 cup cooked & cooled (white) rice

  • Mixed fresh or frozen veggies of choice

  • 4 large eggs

  • 2 tbsp reduced sodium soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp Hoisin sauce

  • 1 tbsp sesame oil

  • 1 tbsp sesame seeds

  • 2 tbsp minced garlic

  • 2 tbsp avocado oil

Instructions

  1. Heat up a wok or large saucepan with 2 tbsp avocado oil.

  2. Add ground turkey & minced garlic. Cook down a little, then crack 4 eggs into the pan.

  3. Scramble the eggs in the pan and allow to cook.

  4. Add cooked, cooled rice & veggies directly to the pan.

  5. Add soy sauce, oyster sauce, hoisin sauce, sesame oil, and sesame seeds. Stir together.

  6. Serve & enjoy, or portion out evenly into containers for meal prep.

If you’re looking to reduce calories from fat in this recipe, consider cutting down on the oils used (use 1 tbsp sesame oil at the beginning & omit avocado oil — ground turkey is very moist so as it cooks down it will release moisture that should prevent it from sticking to the pan.
