Baked Egg Bites

These copycat Starbucks egg bites are great for meal prepping, they reheat easily, and you can customize them to add or omit whatever you choose! If you’re someone like myself who doesn’t have time in the morning to prep breakfast, then these are a great option. At 126 calories & 11g of protein each, you can pick your portion.

Ingredients

  • 1 cup 4% cottage cheese

  • 1 cup shredded cheese (I used a Triple Cheddar blend)

  • 1 dozen (12) eggs

  • 1 bell pepper, finely diced

  • 1 oz salami, finely chopped

  • Seasonings to taste (black pepper, garlic powder, onion powder, etc.)

Instructions

  1. To a blender or food processor, add all your ingredients. Lightly pulse until the eggs are scrambled and the ingredients are mixed together.

  2. Distribute evenly into a lightly greased, 12-cup muffin tin.

  3. Bake at 350°F for about 35 minutes.
