Low-Carb Cheesy Hash Browns
Ingredients
1 package frozen riced cauliflower (I used Walmart/Great Value brand, 12oz package)
2 large eggs
1 cup finely shredded triple cheddar cheese (I used Walmart/Great Value brand)
Instructions
Cook the riced cauliflower to your liking (microwave or stovetop)
Allow to cool and transfer to a mixing bowl
Add the eggs and cheese to the mixing bowl; mix everything together.
Season to your liking (salt, pepper, garlic/onion powder)
Transfer to an oven-safe muffin tin and bake at 375 F for 30 minutes
