Low-Carb Cheesy Hash Browns

Ingredients

  • 1 package frozen riced cauliflower (I used Walmart/Great Value brand, 12oz package)

  • 2 large eggs

  • 1 cup finely shredded triple cheddar cheese (I used Walmart/Great Value brand)

Instructions

  1. Cook the riced cauliflower to your liking (microwave or stovetop)

  2. Allow to cool and transfer to a mixing bowl

  3. Add the eggs and cheese to the mixing bowl; mix everything together.

  4. Season to your liking (salt, pepper, garlic/onion powder)

  5. Transfer to an oven-safe muffin tin and bake at 375 F for 30 minutes
