Chocolate-Covered Strawberry Chia Pudding

Elevate your chia pudding game with homemade strawberry-infused milk— reap the benefits (& taste!) of strawberries, without the artificial colors, flavors, added sugars and other additives found in store-bought strawberry-flavored milks.

Ingredients

  • 4 tbsp chia seeds

  • 1 cup milk of choice (I used FairLife whole milk)

  • 16 oz strawberries

  • 2 tbsp semi-sweet chocolate chips/morsels

  • 2 tbsp pure maple syrup

  • 1- 5.3 oz container vanilla yogurt (I’ve been loving Ratio protein dairy snacks)

Instructions

  1. Remove the stems of the strawberries & slice.

  2. In a blender, add milk, maple syrup, and most of the strawberries, saving some for garnish at the end.

  3. Blend until you have a smooth consistency and gorgeous pink color.

  4. Add your chia seeds and blend together for a few seconds, ensuring all chia seeds are well mix (they tend to clump easily)

  5. Allow to sit in the fridge to set (from personal experience, the longer it sets the better to truly get that ‘pudding-like’ consistency); mine was settling for at least 24-36 hours.

  6. You can prepare the mixture in 1 large jar for storage and presentation purposes, or have 3 smaller air-tight containers ready for pre-portioned servings.

  7. Pour out the chia pudding into your container(s), layering with vanilla yogurt & chocolate chips.

  8. Use the remaining strawberry slices for garnish. Seal and keep chilled until you’re ready to eat & enjoy!
