Egg Roll in a Bowl x Spring Rolls
Stop right at the skillet to enjoy this egg roll in a bowl, or take it up a notch and roll it up in a rice wrapper to make air-fried spring rolls. The bowl is easily re-heatable in the microwave, and the spring rolls can be warmed up in the air-fryer, making this great for meal prep of leftovers.
Experiment with different proteins- chicken, beef, and shrimp would be great alternatives in this dish!
Ingredients
1/2 lb ground/crumbled sausage (or 3 sausage links, taken out of the casing)
Feel free to up the quantity of the protein, especially if you’ll be using this to meal prep
1 bag (about 4 cups) rainbow slaw
2 tbsp garlic puree
2 tbsp reduced sodium soy sauce
2 tbsp Hoisin sauce
2 tbsp toasted sesame oil
Optional: spring roll/rice wraps (I used Ocean’s Halo purple spring roll rice wrappers, 10-pack)
Instructions
Heat up a large pan, add your sausage; crumble further in the pan as needed.
When the sausage is cooked, add your seasonings (garlic, sesame oil, soy & Hoisin sauces).
Stir to distribute the seasonings. Add your rainbow slaw and stir together.
When all the ingredients come together thoroughly, remove from heat.
Serve as is, or scoop out even portions and roll into rice wrappers.
