Mediterranean Turkey Meatballs
These Turkey Meatballs were the inspirational focus behind my Mediterranean-inspired platter. Paired with roasted chickpeas, a classic Greek salad, and homemade tzatziki, these not only taste delicious but also pack in lean protein on your plate.
Ingredients
1 package lean ground turkey (93% lean/7% fat)- I use the Butterball brand from Costco, weighing roughly 1lb, 9-10oz (raw); 27oz
1 egg
1/4 cup season breadcrumbs
1 small red onion, finely chopped
Fresh dill, chopped
Zest of 1/4 lemon
Juice of 1/2 lemon
Instructions
Preheat your oven to 375° F (can also pan-fry or air-fry)
In a large mixing bowl, add all your ingredients (ground turkey, egg, breadcrumbs, onion, dill, lemon juice & zest)
Mix thoroughly and form into meatballs; making as large or as small as you please (I got about 16-18 small to medium meatballs)
Bake for 30-40 minutes, flipping halfway (I tend to err on the side of caution when it comes to poultry and overcook it, but just ensure you are cooking poultry to an internal temperature of at least 165°F).
